What is tahini and how is it produced?

Tahini, also known as sesame paste, is a versatile product made from finely ground sesame seeds. It is a key ingredient in many international cuisines, particularly in the Middle East, and is commonly used in hummus, dressings, or as an ingredient in baked goods. Tahini is characterized by its nutty flavor, creamy consistency, and high content of plant-based protein as well as healthy fatty acids.
The production of tahini begins with the careful selection of high-quality sesame seeds. These are first cleaned to remove any foreign matter. This is typically followed by the hulling of the seeds to achieve a lighter color and a milder taste. In the next step, the sesame seeds are gently roasted. This process is crucial for developing the characteristic aroma and must be precisely controlled to ensure consistent quality. After roasting, the seeds are cooled and then ground in multiple stages into a fine, homogeneous paste.
Depending on the desired consistency and application, the grinding process can be adjusted to achieve a particularly smooth or slightly firmer texture. The result is a natural product without additives, distinguished by its quality and versatility.
